Why is it dovrò and not "doverò"?
Dovere (to have to) is a stem-dropping irregular verb in the future tense. Instead of keeping the "e" before the ending, it drops it completely. The stem becomes dovr-, and adding the first-person future ending -ò gives us dovrò.
The verb sapere is also in this lesson's group of irregular future verbs. Why didn't it change to saprò here?
Because it comes after the preposition per. In Italian, verbs immediately following a preposition stay in their infinitive (dictionary) form. Even though we are talking about a future action, dovrò is the only verb that gets conjugated here.
Why do we need the word per before sapere?
In Italian, when you want to express "in order to" do something, you use per followed by an infinitive verb. Here, per sapere translates to "in order to know" or simply "to know".
Can I use cosa instead of che at the beginning of the sentence?
Absolutely! When asking "What?", you can use che, cosa, or che cosa. They are all interchangeable, so Cosa dovrò fare means exactly the same thing and is very common.
