Why do the verbs bere and dire look like beveva and diceva here?
Even though bere (to drink) and dire (to say) are irregular verbs, their imperfetto forms are actually very predictable once you know their special stems. They use their old Latin roots: bev- for bere and dic- for dire. Once you have that stem, you just add the completely regular imperfetto endings (-evo, -evi, -eva, etc.). For "he", we add -eva, giving us beveva and diceva.
Why use the imperfetto here instead of the passato prossimo?
We use the imperfetto because the sentence describes a habitual, repeated action in the past—something the grandfather "used to" do regularly. If he drank the wine and said the words just once on a specific, completed occasion, we would use the passato prossimo instead (ha bevuto and ha detto).
