Even though hombre (man) is a masculine word, the word for "that" before a masculine noun is ese. The word eso does exist, but it is used for "that" in a general, unknown sense (like "What is that?"), not directly before a specific noun.

Why does alto come after hombre?

In Spanish, descriptive words (adjectives) usually come right after the noun they describe. So instead of saying "tall man" like in English, you say "man tall" (hombre alto).
