Sciogliere is the most semantically broad of the -gliere verbs. Its core meaning is "to undo something held together" — and Italian extends that idea with surprising creativity. You sciogliere a knot, a contract, a doubt, an assembly, a meeting, a friendship, the ice (literal or metaphorical), and chocolate in a saucepan. The reflexive sciogliersi is just as productive: ice melts, sugar dissolves, a crowd disperses, a dancer loosens up, tears flow.
The conjugation is identical to scegliere, togliere, and cogliere: the -gli- / -lg- stem alternation, the 1-3-3 passato remoto in -lsi, the irregular participle in -lto.
The orthography is worth flagging. The cluster sci- is pronounced /ʃi/ (the English "sh") only before e or i: sciogli, scioglie, sciogliamo /ˈʃɔʎʎi, ˈʃɔʎʎe, ʃoʎʎaˈmo/. Before o the -i- is silent — it is purely a graphic marker telling you the sc- is /ʃ/, not /sk/: sciolgo, sciolgono /ˈʃɔlgo, ˈʃɔlgono/. So the -i- you see in sciolgo is doing orthographic work, not phonetic work.

The familiar -lg- / -gli- alternation. Note that sciolgo is /ˈʃɔlgo/ — three letters of orthography (s-c-i) for one /ʃ/ sound, then a clean /lg/ cluster.

The 1-3-3 irregularity, on the contracted -ls- stem. Common in historical and legal contexts, where assemblies and contracts get dissolved.

The participle sciolto also functions as an adjective: capelli sciolti (hair down/loose), un atteggiamento sciolto (a relaxed manner), vino sciolto (loose/unpackaged wine sold from a barrel).

When sciogliersi is used reflexively (intransitively, with the meaning "melt, dissolve"), the auxiliary becomes essere and the participle agrees with the subject.

The reflexive use is huge. Sciogliersi covers melting, dissolving, dispersing, loosening up, and (figuratively) being moved to tears.
Il cioccolato si scioglie a 32 gradi.
Chocolate melts at 32 degrees.
Mi sono sciolta in lacrime quando ho visto la lettera.
I dissolved into tears when I saw the letter.
La folla si è sciolta dopo l'annuncio.
