Why do we use بدهم instead of the normal present tense می‌دهم here?
After the conjunction قبل از اینکه (before), Farsi requires the present subjunctive tense for the action that follows it. Since ordering the rings is the action that hasn't happened yet, we change می‌دهم to the subjunctive بدهم.
How does the subjunctive work with a compound verb like سفارش دادن (to order)?
For compound verbs, you only change the verb part! The noun part (سفارش) stays exactly the same. You just take the verb دادن (to give) and put it into the subjunctive form for "I", which is بدهم. Together, they make سفارش بدهم.
Why does حلقه‌ها (the rings) have را after it, but یک لیست (a list) does not?
The word را is used to mark a specific direct object. Because we are talking about "the rings" (specific), it becomes حلقه‌ها را. On the other hand, "a list" is general and indefinite (marked by یک), so it does not get a را.
Why is می‌نویسم (I write) in the regular present tense rather than the subjunctive?
The subjunctive is only triggered inside the "before..." part of the sentence. The main action of the sentence ("I write a list") is a regular, factual statement about what you do, so it stays in the normal present tense (می‌نویسم).
