Why do we say ovom slonu (dative) instead of ovaj slon (nominative)?
In Croatian, age is expressed using the dative case. You don't say that an elephant "is" sixty years old, but rather that sixty years "are to" the elephant. This is called a dative experiencer construction, which is why we use the dative form ovom slonu.
Why is the word for years godina? Doesn't that just mean one year?
It looks exactly like the nominative singular word for "year", but here godina is actually in the genitive plural. In Croatian, any number from five onwards (like šezdeset) requires the noun that follows it to be in the genitive plural form, which translates literally as "of years".
Since sixty years is plural, why do we use je (is) instead of su (are)?
