Why is it pas d'allergie instead of pas une allergie?
When you completely negate a noun in French, articles like un or une change to de. Because allergie starts with a vowel, de becomes d'. So instead of saying 'not an allergy', French phrasing is closer to 'not any allergy'.
Why do we say pas de gluten instead of pas du gluten?
In a positive sentence, you would use the partitive article du to say 'some gluten' (je mange du gluten). But just like un and une, words for 'some' (du, de la, des) all change to just de in a negative sentence.
Why does the first negative use n' (n'ai pas) while the second uses ne (ne mange pas)?
The negative word ne must drop its 'e' and become an apostrophe (n') whenever the verb following it starts with a vowel sound. Ai starts with a vowel, so we get n'ai. Mange starts with a consonant, so it stays ne mange.
Can I say pas d'allergies with an 's' at the end?
Usually, French keeps the noun singular after pas de unless the item always comes in pairs or groups (like shoes or glasses). Since you can have just one allergy, pas d'allergie (singular) is the most natural way to say 'no allergies' in French.
