Why do we use staan te luisteren instead of just wij luisteren?

Why is naar de muzikant placed in the middle of the sentence?
In Dutch, when a verb has multiple parts, the main conjugated verb (staan) takes the second spot in the sentence, and the rest of the verb phrase (te luisteren) is pushed to the very end. The object you are listening to (naar de muzikant) has to go in the middle.
Is naar always used with luisteren?

Could I use zitten instead of staan if we were seated?
