Why is the word for "we" missing before comemos?
In Spanish, you can usually drop subject pronouns like nosotros (we) because the verb ending already tells you who is doing the action. The -emos ending in comemos can only mean "we eat". You could say Nosotros comemos aquí, but leaving it out is much more natural.
Why do we use es instead of está when talking about the food here?
We use es (from the verb ser) because we are talking about a general, lasting characteristic of the food at this restaurant. The food being good is just how this restaurant is.
