Why is it do sabor instead of just o sabor?
The verb gostar (to like) always requires the preposition de after it. Because sabor (taste) is a masculine noun, it is preceded by the article o (the). When you combine de and o, they merge to form do.
How do we know who likes the coffee if the Portuguese word for I is missing?
In Portuguese, the ending of the verb tells you who is doing the action. Gosto is the eu (I) form of the verb gostar. Because this ending makes the subject obvious, the word eu is usually left out unless you want to add special emphasis.
