Why is it do sol instead of just o sol?
In Portuguese, the verb gostar (to like) always needs the word de (of) after it. You are literally saying "I like of the sun." To say "of the" before a masculine word like sol, you combine de + o to get do.
Do I have to include the word Eu at the beginning?
No, it is completely optional. You will often hear Portuguese speakers just say Gosto do sol. The -o ending on the verb gosto already makes it clear that "I" am the person who likes it, so the subject pronoun is usually dropped.
What if I wanted to say I like a feminine thing, like the moon (a lua)?
You would use da instead of do. Just as de + o makes do for masculine words, de + a makes da for feminine words. To say "I like the moon", you would say Eu gosto da lua.
