Why do we use potresti here instead of puoi?
Potresti is the present conditional form of potere (can/to be able to), meaning "you could". We use it here to give a gentle suggestion or piece of advice, which sounds much softer and more polite than the simple present tense puoi (you can).
Why are both aprire and respirare in their infinitive (dictionary) forms?
They both connect back to the modal verb potresti. Just like in English, you conjugate the modal verb ("you could") and leave the action verbs in the infinitive ("open" and "breathe"). The word e (and) connects the two actions, so you don't need to repeat potresti before respirare.
Why isn't there an article before aria fresca?
Just like in English, you don't always need an article when talking about a general, uncountable concept. Saying respirare aria fresca simply means "to breathe fresh air". If you were talking about a specific draft of air, you might use the article and say l'aria fresca.
