Why do we use sappiamo here instead of a form of conoscere?

In Italian, you can almost always leave out the subject pronoun (like io, tu, or noi) because the verb itself changes to tell you who is doing the action. Sappiamo can only mean "we know," so adding noi at the beginning is optional and mostly just used if you want to add special emphasis.
I thought the preposition su meant "on". Why does it mean "about" here?

Even though sapere is highly irregular in the present tense (with forms like so, sai, and sanno), the "we" form (sappiamo) actually uses the standard -iamo ending that all Italian verbs use for the noi subject. You just have to remember that it has a double p!
