Why do we say az in ke here instead of just using ke for "that"?
In Farsi, the word agah (aware) must be paired with the preposition az (of) — you are "aware of" something. However, you cannot attach a preposition directly to a full clause (a phrase with its own verb). You have to add in ke (this that / the fact that) to bridge them together. Literally, you are saying "aware of the fact that".
Why is the verb inside the clause hastand (indicative) rather than in the subjunctive mood?

Yes! Farsi strongly prefers putting the main verb at the end of the sentence. Here, the main subject is shoma (you) and the main verb is agah hastid (are aware). The entire az in ke clause acts as the object of that awareness, so it gets sandwiched right in the middle between the main subject and the main verb.
How does the phrase bazi az daneshjouha work?
It translates word-for-word to "some of the students". The word bazi means "some", and it pairs with the preposition az (of). Since it refers to a countable group, the noun gets the regular plural suffix -ha to become daneshjouha.
