If I wanted to change this sentence to say "This is someone's sensitive information", how would I use iemands?
You would use the possessive pronoun iemands (someone's) and say: Dit is iemands gevoelige informatie. Notice two other things change: we use dit is to introduce a new subject rather than deze, and gevoelig gets an -e at the end because it is now placed directly in front of the noun.
Why do we use deze instead of dit here?
