Why is it ev işleri instead of just ev işler?
It is a noun compound (isim tamlaması). When combining ev (house) and iş (work/chore) to make 'housework', we must add the possessive compound suffix to the second word. First we make iş plural to get işler, and then add the suffix -i to get ev işleri.
How do we break down the word sorumluluğumuz?
It comes from the noun sorumluluk (responsibility). Because the responsibility belongs to 'us', we add the first-person plural possessive suffix -umuz. Adding a vowel-starting suffix causes consonant mutation, changing the final k in sorumluluk to a soft ğ, resulting in sorumluluğumuz.
