How do we use the word o here?
In this sentence, o translates to 'or'. Just like in English, it is a connecting word that gives a choice between two options: frijoles (beans) and ensalada (salad).
Why doesn't the sentence say ¿Tú quieres...?
In Spanish, the verb ending usually tells you exactly who is doing the action. The -es ending on quieres already means 'you want', so the pronoun tú (you) is completely optional. We usually leave it out unless we want to add extra emphasis.
I learned that the verb for 'to want' is querer. Why is it spelled quieres here?
The base verb is querer, but it is what we call a stem-changing verb. When we change it to match 'you' doing the action, the e in the middle changes into ie, making it quieres. You will see this vowel swap happen with quite a few common Spanish verbs!
Why is it just frijoles o ensalada instead of los frijoles o la ensalada?
When you are asking about an unspecified amount of food, like 'some beans' or 'some salad', you leave out the words for 'the' (el, la, los, las). If you included them, it would sound like you are asking if they want the specific beans you were just talking about, rather than just beans in general.
