Why is simple placed before the noun vínculo in this sentence?

When simple comes before the noun, its meaning changes to 'mere' or 'just a.' So, un simple vínculo means 'a mere bond.' If it were placed after the noun as un vínculo simple, it would mean a 'simple' or 'uncomplicated' bond.

What kind of connection does vínculo refer to here?

Vínculo refers to a bond, link, or tie. It is frequently used for emotional, psychological, or interpersonal connections, making it the most natural word choice for describing a relationship between people.

Why use son instead of están with inseparables?

We use son from the verb ser because being inseparable is described here as an enduring, defining characteristic of their relationship, rather than a temporary state or condition.

Could I drop the pronoun ellos in the second half of the sentence?

Yes, you can completely drop it and just say son inseparables. Including ellos simply adds a bit of emphasis to the subjects, highlighting the specific people involved in this strong bond.
