Why does the phrase use раз instead of разов or раза after пять?
After numbers 5 and higher, Russian requires the Genitive plural. The word раз is a special case where its Genitive plural form is exactly the same as its Nominative singular: just раз. If the number were 2, 3, or 4, you would use the Genitive singular раза (for example, в три раза больше).
Why do we use the preposition в in в пять раз больше?
To say something is a certain number of times bigger, smaller, or faster, Russian uses the preposition в plus the Accusative case for the number, followed by a comparative adjective or adverb. If you wanted to say it was larger by a specific amount (addition rather than multiplication), you would use the preposition на instead.
