Why is there a de after temos?

In English we say "have lunch" (two words), but here it's just one word. How does that work?

In Portuguese, eating a meal is often expressed as a single action verb rather than combining "to have" or "to eat" with a noun. You simply use the verb almoçar (to have lunch). The same rule applies to dinner with the verb jantar.

Why aren't convidar and almoçar conjugated here?

Both of these verbs follow other verbs that have already been conjugated to match the subject: temos (we have) and podem (they can). When you pair verbs together like this, the second verb stays in its raw infinitive (dictionary) form.
