Why does the sentence use sois instead of the normal 'you are' form es?
sois is the imperative (command) form of être (to be) for the tu form. To tell someone to 'be' something, être does not use its regular present tense. It changes completely to sois (for tu), soyons (for nous), or soyez (for vous).
