Why do we use اجتناب می‌کرده است instead of the regular past continuous اجتناب می‌کرد?
The regular past continuous (اجتناب می‌کرد) states a direct fact. Because this sentence starts with می‌گویند (they say), the speaker is reporting a habitual past action they heard about but did not witness. To show this reported or inferred distance, Farsi uses the Evidential Past Continuous, built with می + past participle (کرده) + است.
Why doesn't the second verb, داشته است, have a می prefix to match the evidential continuous mood of the first verb?
The verb داشتن (to have) expresses a state and is a major exception: it almost never takes the continuous می prefix in standard Farsi. To match the reported mood of the first clause, Farsi simply uses its Evidential Past form (داشته است), which looks identical to the Present Perfect.
Why is there an از before هر مصاحبه‌ای?
The formal compound verb اجتناب کردن (to avoid) requires the preposition از (from). In Farsi, you do not avoid something directly; you literally avoid from it.
What role does the ای play at the end of مصاحبه‌ای?
It is the indefinite ی suffix added to a noun ending in a vowel. Used together with هر (every/any), the phrase هر مصاحبه‌ای translates to any interview whatsoever, emphasizing that he avoided all of them without exception.
