What does استراحت میکنم literally mean, and why is it two words?
This is a classic Farsi compound verb. Farsi often creates verbs by pairing a noun or adjective with a simple helper verb like to do (کردن). Here, استراحت is the noun for rest, and میکنم means I do. Literally, you are saying I do rest, which translates as I rest or I am resting.
Why does the second verb start with می but the first one (هستم) does not?
The می prefix is added to most verbs to form the present indicative tense, showing an action happening right now or habitually (like میکنم for I do). However, the verb to be (بودن) is a common exception. Its present tense forms, like هستم (I am), do not use the می prefix at all.
Since the English translation says I am tired and I rest, why is the Farsi word for I (من) only used once?
In Farsi, the verb endings already tell you who is doing the action. Both هستم and میکنم end in ـم, which specifically means I. Because of this, you do not actually need the first من to be understood, but using it once at the start is common for setting up the sentence. Repeating it after و (and) would sound quite unnatural.
