Why use geen ... meer instead of niet meer in this sentence?
We use geen because we are negating a noun (vegetariër). When you want to say 'not a [noun] anymore' or 'no longer a [noun]', Dutch splits the phrase: geen comes right before the noun, and meer comes after it.
Could I say Hij is niet meer een vegetariër?
No, that sounds unnatural in Dutch. Whenever you negate an indefinite noun (a noun with 'a/an' or no article), you must use geen instead of niet een. Adding meer to express 'anymore' doesn't change this core rule.
Why are there two dots on the e in vegetariër?
