Why is the word van used in this sentence?
In Dutch, the verb genieten (to enjoy) always takes the fixed preposition van. Unlike in English where you simply enjoy something directly, in Dutch you must always enjoy from it. You cannot leave van out!
Why does vaak go between the verb and the preposition?
In a simple main clause, adverbs of frequency like vaak (often) usually come right after the main verb. It is perfectly normal for these adverbs to split up a verb and its fixed preposition, which is why genieten and van do not sit right next to each other here.
Could I use houden van instead to say I like the sun?
You could, but it changes the meaning slightly. Wij houden van de zon means you love the sun in general as a concept. Wij genieten van de zon means you are actively experiencing and enjoying it, like sitting outside on a beautiful day soaking up the warmth.
