Why do we use dat instead of die before schilderij?
Because schilderij (painting) is a het word (het schilderij). When you want to say "that" with a singular het word, you must use dat. You only use die for de words and all plural words.
I thought words ending in -erij were de words. Why is this one different?
Most words ending in -erij are indeed de words, like de bakkerij (the bakery) or de boerderij (the farm). However, schilderij is a famous exception! It is always het schilderij, which is why we use dat here.
