Why does the word problem change to problemi?
Problemi is the plural form of the masculine noun problem. In Croatian, regular masculine nouns form their plural by adding the ending -i.
If problemi is plural, why do we use the singular word To for "Those"?
In English, we change "that" to "those" for plurals. However, in Croatian, when you are pointing something out or introducing it (like saying "This is..." or "Those are..."), you always use the fixed word To. It doesn't change to match the plural noun!
If To never changes, how do we know this sentence is plural?
The verb shows you it's plural! We use su (are) because the noun problemi is plural. If it were just one problem, the sentence would use the singular verb je: To je problem (That is a problem).
