It might feel a bit repetitive to an English speaker, but it is very natural in Turkish. İki üç means "two or three," and adding yaklaşık softens it further to emphasize that it is a rough estimate. You can use either one alone, or both together for extra vagueness.

Why don't we use veya (or) between iki and üç?

To express a rough numerical range, Turkish simply puts two consecutive numbers right next to each other, like iki üç (two or three) or beş altı (five or six). Adding veya (or) isn't necessary for this type of sequential approximation.

Since we collected multiple kilos of mushrooms, why aren't kilo or mantar pluralized?

In Turkish, when a noun is preceded by a number or a specific quantity, it must remain in the singular form. Because of the numbers iki üç, both the unit of measurement (kilo) and the item being weighed (mantar) stay singular.
