Why is it çoğu instead of just çok?
When saying 'most of' a specific group, Turkish uses a possessive construction. The group takes the genitive suffix (katılımcıların, meaning 'of the participants') and çok takes the 3rd person possessive suffix -u, meaning 'the most of them'. Notice that adding this vowel causes the k in çok to soften into a ğ (çoğu).
Why is there an -ı at the end of birkaçı?
Just like çoğu, birkaç (a few) takes a possessive suffix to mean 'a few of them'. The sentence could say katılımcıların birkaçı (a few of the participants), but since we already know who we are talking about, Turkish just uses birkaçı by itself.
Why does anket (survey) have an -i at the end?
It has the accusative case suffix because it is the specific direct object of the verb bitirdi (finished). Because we are talking about 'the' survey rather than just any survey, it becomes anketi.
Why do we say bitirmedi at the end instead of just a negative word like değil?
In English we can just say 'a few of them did not', leaving out the verb. In Turkish, you usually repeat the actual verb in its negative form. bitirdi means 'finished', and bitirmedi means 'did not finish'.
