Why is there a på before att? In English, we just say 'doubt that'.

Why use blir for 'will be'? Could I use kommer att vara?
You could use kommer att vara, but blir (becomes/will be) is very natural here. Swedish often uses bli to talk about future states or outcomes, especially when implying a change or a resulting situation. Saying framtiden blir enkel sounds like 'the future is going to turn out simple'.
Why is it enkel and not enkelt?
