Learn Spanish (Latin America): Los datos están encriptados.

This is the state passive (pasiva de resultado). It uses estar + past participle to describe the result of an action, rather than the action itself. If you used son encriptados, it would mean the data is being encrypted right now or as a regular routine (action passive). Here, the encryption is already done, and the data is sitting there in an encrypted state.

Why is it encriptados with an -os at the end instead of just encriptado?

When a past participle is used with estar to form the state passive, it acts like an adjective. This means it must agree in gender and number with the noun it describes. Since los datos is masculine and plural, the participle becomes encriptados.
