For regular -ar verbs, the nosotros (we) form is exactly the same in both the present and the preterite (completed past) tense! The verb disfrutar becomes disfrutamos whether you mean 'we enjoy' or 'we enjoyed'.

How do we know this sentence is in the past tense if the verb could also mean 'we enjoy'?

The time marker anoche (last night) is your big clue. Words like anoche, ayer (yesterday), or el mes pasado (last month) tell you that the action is completed and in the past. Thanks to this context, we know disfrutamos is in the preterite tense here.

Why isn't there a 'we' (nosotros) at the beginning of the sentence?

In Spanish, the subject pronoun nosotros is almost always dropped because the verb ending -amos already tells you exactly who is doing the action. You would only add nosotros if you wanted to add special emphasis or clear up confusion.
