Why does the sentence use el before lunes? Doesn't that mean 'the Monday'?
In English, we say 'on Monday', but in Spanish, you do not use a direct translation for the word 'on'. Instead, you just use the definite article el (the) before a day of the week to say that something happens on that specific day.
Because lunes ends in an 's', does that mean we are talking about multiple Mondays?

It is built right into the verb! The verb visitamos comes from visitar (to visit). The -amos ending tells us that 'we' are doing the action. In Spanish, you can usually leave out the pronoun for 'we' (nosotros) because the verb ending makes it completely clear who is doing the action.
