Why do we use на instead of в for "to" here?
In Russian, we use на (instead of в) when the destination is an event, an activity, or an open space, rather than an enclosed building. Выставка (exhibition) is considered an event, just like a concert or a lecture, so it takes на.
Why did выставка change to выставку?
We use the Accusative case to show the destination of a movement. For feminine nouns that end in -а, the ending changes to -у in the Accusative case. Since the student is going to the exhibition, выставка becomes выставку.
How would I ask "Where is the student going?" based on this sentence?
You must use the question word Куда (Where to) because you are asking about a destination. The question is Куда идёт студент? Be careful not to use Где (Where at), because that only asks about a fixed location where someone already is.
