Why is there no "la" before "signora"?
When you speak directly to someone, you drop the word for "the" (the definite article). You only use the article when talking about someone with a title, like la signora (the lady or Mrs.). Because you are addressing her directly here, you just say signora.
Since "signora" is a formal title, shouldn't the goodbye be "arrivederla"?
Arrivederci is a standard, polite way to say goodbye that works in almost all everyday situations, even with signora. Arrivederla is the extremely formal version of the word, used mostly in highly professional, strict, or very respectful settings.
