Why do we use vos instead of votre here?
In French, possessive adjectives change depending on whether the thing you own is singular or plural. Because clients is plural, you must use the plural form vos. If it were just one client, it would be votre client.
Does vos mean I am talking to one person or multiple people?
It could be either! Because the pronoun vous can mean a plural 'you' (a group of people) or a formal singular 'you' (like a single customer or a stranger), vos clients can mean 'the clients belonging to all of you' or 'the clients belonging to you, sir/ma'am'.
