Learn Dutch: Wat een enorme leeuw! - What an enormous lion!

Because leeuw (lion) is a singular, countable noun. For singular countable nouns, Dutch uses wat een (just like "What a..." in English). If the noun were plural (leeuwen) or uncountable, you would drop the een and just use wat, as in Wat enorme leeuwen!

Why does the adjective enorm get an -e at the end here?

Because leeuw is a de-word (de leeuw). When an adjective comes before a de-word, it always gets an -e ending, even after the word een. You only leave off the -e if you are describing a het-word that comes after een (for example: Wat een groot dier!).

Could I use wat voor een in this sentence instead of wat een?

Not without changing the meaning. Wat een is an exclamation meaning "What a...!" to express surprise or emphasis. Wat voor een is used to ask a question about the type or kind of something. So Wat voor een enorme leeuw? would be a question asking "What kind of enormous lion?".
