We use alle because we are talking about donations in a general sense, just like "all donations" in English. If we were talking about specific donations, like "all the donations from yesterday", we would use al de donaties.

I see het goede doel translates to "the charity", but what does it mean literally?

Literally, it translates to "the good goal" or "the good purpose". The noun doel means "goal" or "target". In Dutch, referring to "the good cause" (het goede doel) is the standard way to talk about charity.

Why is there an -e added to the end of goede?

Doel is a neuter noun (het doel). When an adjective comes before a het-word that includes the definite article het, the adjective gets an -e ending. You only drop the -e for het-words if you use een (a) or no article at all, like in een goed doel.
