Recipes reveal how Hindi gives instructions without repeatedly saying “you.” This original two-person poha recipe uses polite plural imperatives (neutral written instructional register), conjunctive participles, event sequencing, and several omitted ingredients whose identity remains obvious from the previous step.
The polite forms do not imply that a cookbook is addressing a social superior. In public instructions, आप-level imperatives such as डालें, करें, मिलाएँ create a courteous impersonal voice. A family member speaking casually to one familiar person might instead use डालो, करो, मिलाओ.
The complete original recipe
do logoṃ ke lie masālā pohā. ek channī meṃ ḍeṛh kap pohā ḍāleṃ aur use jaldī se pānī se dho leṃ. use pā̃c minaṭ bhīgne deṃ. kaṛāhī meṃ do cammac tel garam kareṃ aur usmeṃ ādhā cammac rāī ḍāleṃ. rāī caṭakne lage, to ek bārīk kaṭā pyāz aur ek kaṭī harī mirc ḍālkar naram hone tak bhūneṃ. phir ādhā cammac haldī, thoṛā namak aur bhīgā huā pohā ḍāleṃ. sab kuch halke hāth se milāẽ, ā̃c dhīmī karke do minaṭ ḍhakkar pakāẽ. gais band karne ke bād nīmbū kā ras ḍāleṃ, ūpar se harā dhaniyā bikhereṃ aur garamāgaram paroseṃ.
Masala poha for two. Put one and a half cups of poha in a strainer and rinse it quickly with water. Let it soak for five minutes. Heat two spoonfuls of oil in a wok and add half a spoonful of mustard seeds. When the seeds begin to crackle, add one finely chopped onion and one chopped green chili, and sauté until soft. Then add half a spoonful of turmeric, a little salt, and the soaked poha. Mix everything gently, lower the heat, cover, and cook for two minutes. After turning off the heat, add lemon juice, scatter fresh cilantro over the top, and serve piping hot.
The passage contains no overt आप, but every finite command addresses an understood respectful or generic आप. Ingredients become topics once introduced: पोहा becomes उसे, कड़ाही becomes उसमें, and राई remains the understood subject of चटकने लगे.
Heading and quantities: noun phrases without a verb
दो लोगों के लिए मसाला पोहा।
do logoṃ ke lie masālā pohā.
Masala poha for two people. (recipe heading)
This is a heading, not an incomplete spoken assertion. दो लोगों के लिए gives the intended number of servings; लोगों is oblique plural before the compound postposition के लिए. The dish name follows as the informational center.
एक छन्नी में डेढ़ कप पोहा डालें और उसे जल्दी से पानी से धो लें।
ek channī meṃ ḍeṛh kap pohā ḍāleṃ aur use jaldī se pānī se dho leṃ.
Put one and a half cups of poha in a strainer and rinse it quickly with water.
The measure phrase is डेढ़ कप पोहा, with no equivalent of English of. The recipe starts with destination एक छन्नी में, then quantity and ingredient, and ends with polite imperative डालें. That order keeps the work surface in view before naming the action.
In the coordinated clause, accusative उसे refers to the newly introduced poha. पानी से marks the washing medium. The compound imperative धो लें combines धोना with light verb लेना: complete the rinsing for the purpose at hand. It often sounds more bounded and practically considerate than bare धोएँ, not literally “take the washing.”
Letting an ingredient undergo a process
उसे पाँच मिनट भीगने दें।
use pā̃c minaṭ bhīgne deṃ.
Let it soak for five minutes.
The frame X को + infinitive oblique + देना means “let X do/become”: उसे … भीगने दें. Here उसे still means the poha. English soak it can be transitive, but Hindi chooses intransitive भीगना, because the flakes undergo wetting after being rinsed.
पाँच मिनट is a bare duration phrase. Hindi does not require a preposition corresponding to English for. The instruction leaves the endpoint implicit: after five minutes, move to the next step.
Introducing the pan, then referring back to it
कड़ाही में दो चम्मच तेल गरम करें और उसमें आधा चम्मच राई डालें।
kaṛāhī meṃ do cammac tel garam kareṃ aur usmeṃ ādhā cammac rāī ḍāleṃ.
Heat two spoonfuls of oil in a wok and add half a spoonful of mustard seeds to it.
The first में establishes the cooking vessel. The locative pronoun उसमें then retrieves it: उस + में, “in it.” It cannot naturally refer to the oil in this instruction because seeds are added into the pan/oil scene, and the pan is the overt locative antecedent.
तेल गरम करें is a transitive complex predicate: “make the oil hot / heat the oil.” Masculine गरम does not visibly change. The polite imperative ending -ें remains the same across the sequence because the understood addressee remains the same.
A condition before the next command
राई चटकने लगे, तो एक बारीक कटा प्याज़ और एक कटी हरी मिर्च डालकर नरम होने तक भूनें।
rāī caṭakne lage, to ek bārīk kaṭā pyāz aur ek kaṭī harī mirc ḍālkar naram hone tak bhūneṃ.
When the mustard seeds begin to crackle, add one finely chopped onion and one chopped green chili, and sauté until soft.
This sentence uses a compact recipe condition: राई चटकने लगे, तो…. The first clause has subjunctive-like लगे, suitable for an anticipated threshold. तो introduces the action to take when that state is reached. English naturally chooses when, but the Hindi logic is “if/when the mustard begins crackling, then…”.
In बारीक कटा प्याज़, masculine कटा agrees with प्याज़; in कटी हरी मिर्च, both modifiers are feminine. The conjunctive participle डालकर shares the omitted addressee with भूनें: “[you] add … and [you] sauté.” The endpoint phrase नरम होने तक—“until becoming soft”—applies most naturally to the onion, with the chili included in the sautéed mixture.
The order creates a cook's attention path: audible cue राई चटकने लगे → new ingredients → preparatory addition → monitored endpoint. Neutral expository prose might name the grammatical subject more often, but recipes prioritize what the cook must notice next.
Participles keep track of ingredient state
फिर आधा चम्मच हल्दी, थोड़ा नमक और भीगा हुआ पोहा डालें।
phir ādhā cammac haldī, thoṛā namak aur bhīgā huā pohā ḍāleṃ.
Then add half a spoonful of turmeric, a little salt, and the soaked poha.
फिर advances the sequence. भीगा हुआ is a perfective adjectival participle: the poha is now in the state produced by the earlier rinse and rest. Masculine singular भीगा हुआ agrees with mass-like पोहा. The participle creates cohesion by reminding the reader which batch of poha is intended without repeating the earlier instructions.
The quantity expressions show lexical agreement: आधा चम्मच हल्दी treats the spoonful as masculine, while थोड़ा नमक agrees with masculine नमक. A mechanical English-to-Hindi translation that treats every amount as invariant misses this pattern.
Manner, heat, and a compressed action chain
सब कुछ हल्के हाथ से मिलाएँ, आँच धीमी करके दो मिनट ढककर पकाएँ।
sab kuch halke hāth se milāẽ, ā̃c dhīmī karke do minaṭ ḍhakkar pakāẽ.
Mix everything gently, lower the heat, cover, and cook for two minutes.
Idiomatic हल्के हाथ से means gently, with a light touch. It matters because poha flakes can break; this manner phrase encodes practical knowledge, not decorative style.
The next clause compresses three actions. आँच धीमी करके means “having made the heat low”; ढककर means “having covered [the pan/mixture]”; पकाएँ carries the only finite imperative. The omitted object of ढककर is recoverable from the active cooking scene. Hindi need not insert “it” after every verb.
Finishing: after, from above, and coordinated commands
गैस बंद करने के बाद नींबू का रस डालें, ऊपर से हरा धनिया बिखेरें और गरमागरम परोसें।
gais band karne ke bād nīmbū kā ras ḍāleṃ, ūpar se harā dhaniyā bikhereṃ aur garamāgaram paroseṃ.
After turning off the heat, add lemon juice, scatter fresh cilantro over the top, and serve piping hot.
गैस बंद करने के बाद nominalizes the action with oblique infinitive करने before के बाद. In everyday Indian kitchen Hindi, गैस बंद करना means turning off the gas burner; in a non-gas kitchen, आँच बंद करें is more technology-neutral.
ऊपर से specifies the top as the source/path from which cilantro is scattered. हरा धनिया in Indian Hindi normally means fresh cilantro leaves, not dry coriander seed. Final डालें, बिखेरें, परोसें are parallel polite commands, while reduplicated गरमागरम intensifies “hot” to “piping hot.”

Common Mistakes
Adding an overt आप to every instruction
❌ आप पोहा डालो और उसे धो लो।
Incorrect in Standard Hindi—the familiar -ओ imperative does not match respectful आप.
✅ पोहा डालें और उसे धो लें।
pohā ḍāleṃ aur use dho leṃ.
Add the poha and rinse it.
Copying English “of” into a measure phrase
❌ डेढ़ कप का पोहा डालें।
Wrong for ‘one and a half cups of poha’; का would create a different possessive relation.
✅ डेढ़ कप पोहा डालें।
ḍeṛh kap pohā ḍāleṃ.
Add one and a half cups of poha.
Making the ingredient transitive with भीगना
❌ पोहे को पाँच मिनट भीगें।
Incorrect—the ingredient undergoes soaking; use भीगने दें in this instruction.
✅ पोहे को पाँच मिनट भीगने दें।
pohe ko pā̃c minaṭ bhīgne deṃ.
Let the poha soak for five minutes.
Losing agreement inside the ingredient phrase
❌ एक बारीक कटी प्याज़ और एक कटा हरी मिर्च डालें।
Incorrect in the guide's standard: masculine प्याज़ takes कटा; feminine मिर्च takes कटी and हरी.
✅ एक बारीक कटा प्याज़ और एक कटी हरी मिर्च डालें।
ek bārīk kaṭā pyāz aur ek kaṭī harī mirc ḍāleṃ.
Add one finely chopped onion and one chopped green chili.
Key Takeaways
- Written recipes commonly use polite plural imperatives without an overt आप.
- Quantity phrases such as डेढ़ कप पोहा do not insert a Hindi equivalent of English of.
- Conjunctive -कर forms let one understood cook perform a compressed sequence of actions.
- उसे and उसमें retrieve ingredients and vessels already active in the procedure.
- State participles such as भीगा हुआ connect an ingredient's present condition to an earlier step.
From recipe order to neutral prose
Recipe order follows attention and hand movement: vessel, ingredient, cue, action, endpoint. Subjects and objects disappear once the physical context identifies them. A neutral prose description restores agents and reports what happens rather than telling a cook what to do:
इस विधि में रसोइया पहले पोहे को धोकर पाँच मिनट के लिए भिगोता है। वह कड़ाही में तेल गरम करता है और राई चटकने पर प्याज़ तथा हरी मिर्च भूनता है। इसके बाद हल्दी, नमक और पोहा मिलाकर मिश्रण को धीमी आँच पर दो मिनट पकाया जाता है। अंत में नींबू का रस और हरा धनिया डालकर पोहा परोसा जाता है।
is vidhi meṃ rasoiyā pahle pohe ko dhokar pā̃c minaṭ ke lie bhigotā hai. vah kaṛāhī meṃ tel garam kartā hai aur rāī caṭakne par pyāz tathā harī mirc bhūntā hai. iske bād haldī, namak aur pohā milākar miśraṇ ko dhīmī ā̃c par do minaṭ pakāyā jātā hai. ant meṃ nīmbū kā ras aur harā dhaniyā ḍālkar pohā parosā jātā hai.
In this method, the cook first rinses the poha and soaks it for five minutes. The cook heats oil in a wok and sautés onion and green chili when the mustard seeds crackle. The turmeric, salt, and poha are then mixed, and the mixture is cooked over low heat for two minutes. Finally, lemon juice and cilantro are added and the poha is served. (neutral explanatory prose)
The paraphrase introduces रसोइया, later shifts to passive पकाया जाता है / परोसा जाता है, and packages the food as मिश्रण. It is appropriate for describing the method; the original imperative chain is better for actually guiding a cook.
