The suffix -de means "in" or "at", showing where the action is happening. If you used the ablative suffix -den to make kafeden, it would mean "from the café" (for example, walking away from the café). Because we are actively sitting inside the location, we use the locative suffix -de.

Why is the word for coffee just kahve instead of kahveyi?

We use the plain form kahve because we are talking about drinking coffee in general. If you were drinking a specific, previously mentioned cup of coffee and wanted to say "We are drinking THE coffee", you would add the specific object suffix and say kahveyi.
