Mersi is the everyday, informal thanks — friends and shops use it all the time. The answer to any thank-you is pentru puțin (for a little — don't mention it) or cu plăcere.

Nu-i nimic (it's nothing) and nu contează (it doesn't matter) accept an apology. Nu-i is the spoken form of nu e.
