Why is eläinlääkäri (vet) in the adessive case (eläinlääkärillä)?
Doesn't käydä describe movement? Why doesn't it use a "to" case?
This is exactly what makes käydä tricky! Unlike mennä (to go), which describes one-way motion and takes a destination case, käydä implies a complete round trip: you go, spend time there, and leave. Because it focuses on the event of the visit itself, it governs the static "at/in" cases.
Why is the subject "you" in the genitive case (sinun) in the second half of the sentence?
This is required by the verb täytyy (must). In Finnish, this verb creates a "necessive sentence" where the person who has to do the action is always in the genitive case. The verb itself stays frozen in the third-person singular (täytyy) and doesn't get a personal ending like a normal verb would.
