Since we are learning about plural demonstratives like آنهـا (ânhâ - those), how would I change this sentence to say "Those projects are very organized"?

You would say آن پروژه‌هـا خیلی منظم هستند. Notice that we still use the singular آن (ân) before the noun! In Farsi, when words like "this" or "that" are placed right next to a noun to describe it, they never become plural. You only use the plural آنهـا (ânhâ) when it stands alone as a pronoun, such as آنهـا خیلی منظم هستند (Those are very organized).

Why isn't there an ezafe (the connecting "ye" sound) between پروژه (project) and خیلی (very)?

We only use an ezafe when we want to link a noun directly to its adjective in a phrase, like saying "that very organized project" (آن پروژه‌ی خیلی منظم).
