Roasting coffee is all about balancing contrasts—heat versus time, sourness versus bitterness. To express contrasting ideas in Farsi, you will use the conjunctions اگرچه and هرچند to say "although" or "even though." These two words are interchangeable.
Stating Facts (Indicative Mood)
When you are contrasting known facts or real events, simply use اگرچه or هرچند with the indicative mood (your standard present or past tenses). You can place the conjunction at the beginning of the sentence to introduce the condition.
| Even though the heat is high, the coffee's flavor is sour. | هرچند حرارت زیاد است، طعم قهوه ترش است.harchand harârat ziyâd ast, ta'm-e qahve torsh ast. |

Middle Placement
Just like in English, you can also place the conjunction in the middle of a sentence to connect the two clauses.
| I was going to turn up the heat, although the beans were dark. | میخواستم حرارت را زیاد کنم، اگرچه دانهها تیره بودند.mikhâstam harârat râ ziyâd konam, agarche dâneha tire budand. |
| While he cools the coffee, I watch the process, even though it is late. | در حالی که او قهوه را خنک میکند، من فرآیند را تماشا میکنم، هرچند دیر است.dar hâli ke u qahve râ khonak mikonad, man farâyand râ tamâshâ mikonam, harchand dir ast. |
Hypothetical Situations (Subjunctive Mood)
Sometimes, "even though" refers to a possibility rather than a confirmed fact, much like saying "even if..." or "even though it might be...". When the situation is hypothetical, Farsi uses the subjunctive mood.
For example, if you are discussing a batch of coffee that might be sour, you use the subjunctive form of "to be" (باشد).
