Why does it say houd van instead of just houd for "love"?
The Dutch verb for "to love" or "to like" something is the combination houden van. If you only say houden, it means "to hold" or "to keep". You always need van when expressing that you love a thing, person, or activity.
Since this lesson is about negation, how would I add niet to say "I don't love music"?

Why doesn't the word maar change the word order in the second half of the sentence?
