These particles are placed at the end of a negative sentence (typically one containing ไม่ or ไม่ได้). They convey the feeling of "It is not like that at all!" or "I didn't do that!". ซะหน่อย is common in everyday speech, while เสียหน่อย is a slightly more formal variant used in the exact same way.
