When you want to contrast two ideas efficiently, you can use the phrase om än (albeit / even if).
Instead of building a full subordinate clause with a subject and verb, om än acts as a shortcut. You can attach an adjective or a noun phrase directly to it.
Notice how the adjective after om än still agrees with the noun it describes. Since mejeriet (the dairy) is an ett-word, the adjective takes a -t ending to become hantverksmässigt (artisanal).
