Ucho is a neuter noun, but because ears come in naturally occurring pairs, its plural uses a historical grammatical form called the dual number. This gives us the highly irregular plural uszy. Other paired body parts do this too, like oko (eye) becoming oczy.

Why do we use twoje instead of twoi for the ears?

In the plural, Polish grammar divides nouns into masculine-personal (groups including at least one man) and non-masculine-personal (everything else, including animals, objects, and body parts). Ears fall into the non-masculine-personal group, so the possessive pronoun takes the non-masculine-personal plural form twoje.

Why does jakiś dziwny dźwięk look like it is in the nominative (dictionary) form when it is the direct object?

The verb słyszeć requires the accusative case for the object being heard. However, dźwięk is a masculine inanimate noun. For masculine inanimate nouns, the accusative case form is always identical to the nominative form. The modifiers jakiś and dziwny simply follow this same rule.
