Why do we use potrafię here instead of mogę?
Mogę means having the physical ability, time, or permission to do something. Potrafię means having the acquired skill or capability. Since cooking is a learned skill, nie potrafię means "I don't know how", whereas nie mogę gotować would mean "I am not allowed to cook" or "I have no time to cook right now".
Could I use umieć instead of potrafić in this sentence?
Yes! Nie umiem gotować would mean exactly the same thing. For learned skills like cooking, speaking a language, or swimming, umieć and potrafić are almost entirely interchangeable in everyday Polish.
Why is the imperfective verb gotować used instead of the perfective ugotować?
We use the imperfective gotować because the sentence is about a general, ongoing skill, not completing a specific, single task. If you said Nie potrafię tego ugotować, it would mean "I am not able to cook this specific thing to completion."
Why isn't there a personal pronoun like ja at the beginning of the sentence?
