The verb uscire (to go out) has a very irregular present tense. The forms for I, you, he/she, and they all change the starting "u" to an "e" (esco, esci, esce, escono). However, the forms for we (usciamo) and you all (uscite) keep the original "u" from the dictionary form uscire.

Why do we use il before the days of the week? Doesn't that mean "the Wednesday"?

In Italian, putting a definite article like il before a day of the week means the action is a regular habit. So, il mercoledì translates to "on Wednesdays" or "every Wednesday". If you were only going out this coming Wednesday, you would just say Usciamo mercoledì without the il.

The English translation says "Wednesdays and Thursdays" (plural). Why are mercoledì and giovedì singular here?

To express "on Wednesdays", Italian uses the singular article and singular day (il mercoledì). As a side note, even if you did make them plural (i mercoledì), the words mercoledì and giovedì wouldn't change their spelling! In Italian, nouns that end in an accented vowel stay exactly the same in the plural.
